Florida Seafood Recipe

Grouper with Lemon-Caper Sauce

Ingredients
Amount Ingredient
1 1-pound Florida grouper filet
1/2 cup whole milk
2 tablespoons unsalted butter
2 tablespoons capers, dra
1 teaspoon Dijon mustard
2 lemons
  freshly ground pepper to taste

Preparation
Place the fish in a medium ovenproof skillet or gratin dish. Pour milk on fish and let it marinate at least 15 minutes, covered and in the refrigerator. Preheat oven to 400 degrees F and set oven rack in center of oven. In a small saucepan, melt the butter over low heat. When it begins to sizzle, add the capers, mustard, the juice of one lemon, and pepper; stir to create a smooth sauce. Cook sauce for 5 minutes or until it is slightly thickened. Bake the fish for 10 minutes. Remove fish from oven and preheat the broiler. Spoon the sauce over the fish; do not drain off the milk. Place under the broiler for 3-5 minutes, or until the fish begins to turn golden brown. Serve hot with lemon wedges.
