Florida Seafood Recipe

Baked Flounder

Ingredients  
1 tablespoon butter, melted
2 tablespoons fresh lemon juice
1 pound Florida flounder fillets
  salt to taste
3 tablespoons mayonnaise
1/2 cup saltine cracker crumbs
3 tablespoons butter, melted
1/3 cup slivered almonds, toasted
 
Preparation  

Combine 1 tablespoon melted butter and lemon juice in a 13x9 baking dish. Arrange fillets in dish; sprinkle with salt. Spread mayonnaise to cover fillets. Combine cracker crumbs, 3 tablespoons melted butter and almonds; sprinkle over fillets. Bake uncovered at 400 degrees F for 10 to 15 minutes or until fish flakes easily when tested with a fork. Serve with lemon wedges.
