Swordfish Steaks Sicilian

Amount Ingredient
Ingredients  
4 8-ounce swordfish steaks, 2 inches thick, skin removed
5 tablespoons olive oil, divided
3 tablespoons fresh Florida lemon juice
1 tablespoon seafood seasoning
  salt to taste
  black pepper to taste
1/4 cup Florida onion, chopped
1 clove Florida garlic, mincedg
3 cups fresh Florida spinach, chopped
1/2 cup crumbled feta cheese

Preparation
To create a pocket, cut a horizontal slit into one side of each steaks; do not cut through to opposite edge. In a cup, mix together 3 tablespoons olive oil and lemon juice; brush onto both sides of steaks. Season steaks with seafood seasoning, salt and pepper. Set aside. In a small skillet over medium heat, heat 1 tablespoon olive oil; add onion and garlic; sauté until soft. Add spinach and cook until wilted. Remove pan from heat. Fill pockets with spinach first; then add feta cheese at top of pocket. Heat the remaining tablespoon of oil in a large sauté pan over high heat. Add steaks and cook for 6-8 minutes. Turn steaks and continue cooking 6-8 minutes until cooked through.
