bacon slices |

medium Florida onions, diced |

large Florida green bell pepper, diced |

Florida jalapeno peppers, seeded and minced |

Florida garlic cloves, minced |

cups Florida tomatoes, diced |

cup cocktail sauce |

teaspoon salt |

teaspoon pepper |

cups grits |

pounds peeled, deveined medium Florida shrimp |

| Preparation |
Cook bacon in a large skillet until crisp. Remove bacon and drain on
paper towels; set aside. Reserve 3 tablespoons drippings in skillet. Sauté onion in hot
drippings for 5 minutes. Stir in bell pepper, jalapenos and garlic; sauté 7 minutes or
until tender. Stir in tomatoes, cocktail sauce, salt and pepper. Reduce heat and simmer
for one hour, stirring occasionally. Cook grits according to package instructions; set
aside. Stir shrimp into tomato mixture; cook 5 minutes. Serve shrimp over hot cooked
grits and top with crumbled bacon.
