Super Bowl Shrimp

Ingredients  
7 bacon slices
2 medium Florida onions, diced
1 large Florida green bell pepper, diced
3 Florida jalapeno peppers, seeded and minced
4 Florida garlic cloves, minced
7 cups Florida tomatoes, diced
1/4 cup cocktail sauce
1/2 teaspoon salt
1/8 teaspoon pepper
4 cups grits
2 pounds peeled, deveined medium Florida shrimp
 
Preparation

Cook bacon in a large skillet until crisp. Remove bacon and drain on paper towels; set aside. Reserve 3 tablespoons drippings in skillet. Sauté onion in hot drippings for 5 minutes. Stir in bell pepper, jalapenos and garlic; sauté 7 minutes or until tender. Stir in tomatoes, cocktail sauce, salt and pepper. Reduce heat and simmer for one hour, stirring occasionally. Cook grits according to package instructions; set aside. Stir shrimp into tomato mixture; cook 5 minutes. Serve shrimp over hot cooked grits and top with crumbled bacon.
