pound fish fillets, cut into 1-inch cubes |

large tomatoes, peeled and cut into wedges |

cup onions, sliced |

cup carrots, julienned |

teaspoon basil or dill |
| 1 |
large green bell pepper, cut into 1/4-inch strips |

teaspoon pepper |

tablespoons vegetable oil |

| Preparation |
Sauté onions, carrots and green pepper in oil
over medium heat for 5 minutes. Add fish
and remaining ingredients; stir well. Cover, reduce heat,
and simmer for 10 minutes or
until fish flakes easily and is no longer translucent in the
center.
