Pan-Fried Tilapia

Ingredients
2/3 cup cornmeal
1/2 teaspoon salt
1/2 teaspoon paprika
2 pounds Florida tilapia fillets
  vegetable oil for frying
 
Preparation
Combine cornmeal, salt and paprika. Coat fillets with cornmeal mixture. Pour about 1/8- inch of oil in a heavy skillet and heat to 360 degrees F. Place fillets in skillet and fry for 4-5 minutes or until brown; turn carefully and cook an additional 4-5 minutes or until fish flakes easily with a fork. Drain on a paper towel.
